🌿 Root Vegetable Gratin with Sweet Potatoes, Parsnips & Beets

Ingredients:

  • 2 medium sweet potatoes, peeled and thinly sliced
  • 2 medium parsnips, peeled and thinly sliced
  • 2 medium beets, peeled and thinly sliced
  • 1 tablespoon olive oil
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons butter

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a baking dish with butter or olive oil.
  3. In a bowl, toss the sweet potatoes, parsnips, and beets with olive oil, thyme, salt, and pepper.
  4. Arrange the sliced vegetables in rows in the baking dish.
  5. Dot the top with small pieces of butter.
  6. Bake for 45–55 minutes, or until vegetables are tender and lightly browned.
  7. Let cool slightly before serving. Enjoy!
