Ingredients ๐
- 5 chicken drumsticks
- 500g (1.1 lb) baby potatoes, halved or quartered
- 3 large carrots, peeled & chopped
- 3 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- 1 tsp paprika
- Salt & pepper to taste
- 1 tbsp chopped fresh parsley (for garnish)
Instructions ๐จโ๐ณ
- Preheat oven to 400ยฐF (200ยฐC).
- In a large bowl, toss potatoes and carrots with 2 tbsp olive oil, half the garlic powder, oregano, thyme, paprika, salt, and pepper.
- Place vegetables in a single layer on a baking tray.
- Rub chicken drumsticks with remaining olive oil and season with the rest of the spices.
- Nestle the chicken among the vegetables on the tray.
- Roast for 40โ45 minutes, flipping vegetables once halfway, until chicken is golden and cooked through (internal temp: 165ยฐF / 74ยฐC).
- Sprinkle with fresh parsley before serving.
Tips & Variations:
- Add red onion wedges or bell peppers for extra flavor.
- Use sweet potatoes instead of carrots for a twist.
