German Potato Soup

German Potato Soup (Kartoffelsuppe)
A hearty, creamy, smoky German-style potato soup loaded with carrots, herbs, and sausage. Perfect for cold days!
Ingredients
- 4 cups diced potatoes
- 2 carrots, sliced
- 1 onion, diced
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream (or whole milk)
- 8 oz smoked sausage (Kielbasa or German sausage), sliced
- 2 tbsp butter
- 1 tsp dried thyme
- 1 tsp dried parsley (or fresh for garnish)
- Salt and black pepper to taste
Instructions
- In a large pot, melt butter over medium heat. Add onion, celery, carrots, and garlic. Sauté until softened.
- Add potatoes, thyme, salt, and pepper. Stir for 2 minutes.
- Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 20 minutes or until potatoes are tender.
- Add sliced sausage and simmer for another 10 minutes.
- Stir in the heavy cream and cook on low heat until warmed through.
- Taste and adjust seasoning.
- Serve hot topped with fresh parsley.
Tips
- For extra creaminess, mash a few potatoes directly in the pot.
- Use smoked German sausage for authentic flavor.
- Great with crusty bread on the side.
