Grandma’s Savory Beef & Cheese Puff Pastry Bake

This family classic may not look fancy, but one bite will tell you exactly why everyone becomes obsessed with it. Tender beef, melty cheese, and vegetables wrapped in buttery puff pastry — pure comfort food!

Ingredients

For the Filling:

  • 3 cups cooked shredded beef (brisket, pot roast, or leftover roast beef)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 1 small green pepper, diced
  • 1 small red pepper, diced
  • 1 cup sliced mushrooms (optional)
  • 2 cloves garlic, minced
  • 1 cup shredded cheese (cheddar, provolone, or mozzarella)
  • 1 tsp paprika
  • 1 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt to taste
  • 1/2 cup beef gravy or beef broth

For the Crust:

  • 1–2 sheets puff pastry, thawed
  • 1 egg (for egg wash)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Heat olive oil in a skillet over medium heat. Add onion, peppers, mushrooms, and garlic. Cook until softened.
  3. Add the shredded beef, spices, salt, and pepper. Mix well.
  4. Stir in the cheese and beef gravy/broth until melted and creamy. Remove from heat and let cool for 10 minutes.
  5. Lay the puff pastry on a baking sheet. Spoon the beef mixture into the center and shape into a log.
  6. Fold the pastry over the filling and seal the edges. Place seam-side down.
  7. Brush the top with beaten egg.
  8. Bake for 25–30 minutes until golden and crisp.
  9. Let rest for 10 minutes before slicing.

Serving Suggestions

  • Serve with mashed potatoes
  • Drizzle extra gravy on top
  • Pair with roasted vegetables
