Cajun White Chicken Chili
A creamy, spicy, flavor-packed chili with Cajun seasoning, tender chicken, and a rich, comforting broth.
Ingredients
Chili Base:
- 2 tbsp olive oil
- 1 lb chicken breast, diced or shredded
- 1 onion, chopped
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 1 can (15 oz) white beans, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 2 cups chicken broth
- 1 tsp Cajun seasoning
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp oregano
- Salt & black pepper, to taste
Creamy Base:
- 1 tbsp butter
- 1/2 cup sour cream
- 1/4 cup grated Parmesan cheese
Garnishes:
- Fresh lime juice
- Chopped cilantro or parsley
- Sliced green onions
Instructions
- Heat olive oil in a pot over medium heat. Add the chicken and cook until lightly browned. Remove and set aside.
- In the same pot, add onion, bell pepper, and garlic. Sauté until softened.
- Return the chicken to the pot. Stir in Cajun seasoning, cumin, paprika, oregano, salt, and pepper.
- Add diced tomatoes, white beans, and chicken broth. Stir and bring to a gentle boil.
- Reduce heat and simmer for 15–20 minutes, until the chili thickens slightly and chicken is tender.
- Stir in butter, sour cream, and Parmesan cheese until melted and creamy.
- Taste and adjust seasoning as needed.
- Serve hot topped with lime juice, cilantro, and green onions.
