Easy Slow Cooker Beef, Potato & Cabbage Dinner
This hearty slow cooker meal is warm, comforting, and packed with tender beef, vegetables, and rich flavor — perfect for busy days!
Ingredients
- 2 lbs beef chuck roast, cut into large chunks
- 4–5 medium potatoes, halved
- 3 large carrots, sliced into chunks
- 3 celery stalks, chopped
- 1/2 head cabbage, chopped
- 1 onion, chopped
- 4 cups beef broth
- 3 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried parsley
- Salt and pepper, to taste
- Fresh parsley for garnish (optional)
Instructions
- Place potatoes, carrots, celery, onion, and cabbage into the bottom of the slow cooker.
- Add the beef chunks on top of the vegetables.
- Season with garlic, thyme, parsley, salt, and pepper.
- Pour beef broth over everything.
- Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours, until the beef is tender and vegetables are soft.
- Stir gently before serving and garnish with fresh parsley.

Cook Time: 8–9 hours (slow cooker)
