Baked Potato Chicken & Broccoli Casserole
A creamy, cheesy, family-friendly casserole loaded with tender chicken, soft potatoes, and fresh broccoli.
Ingredients
- 3 cups cooked chicken, shredded or diced
- 3 cups potatoes, small diced
- 2 cups broccoli florets
- 3 cloves garlic, minced
- 1 small onion, diced
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 can (10.5 oz) cream of chicken soup
- ½ teaspoon paprika
- Salt and pepper, to taste
- ½ cup breadcrumbs (optional topping)
- 2 tablespoons melted butter (optional topping)
Instructions
- Preheat oven to 375°F (190°C). Grease a medium casserole dish.
- Boil diced potatoes for 8ā10 minutes until tender but not mushy. Drain.
- Lightly steam broccoli for 3 minutes or until bright green.
- In a large bowl, combine cooked chicken, potatoes, broccoli, garlic, and onion.
- Add sour cream, cream of chicken soup, paprika, salt, and pepper. Mix well.
- Stir in cheddar and mozzarella cheese.
- Transfer mixture to the casserole dish.
- If using, mix breadcrumbs with melted butter and sprinkle on top.
- Bake for 25ā30 minutes or until bubbly and golden on top.
- Let stand for 5 minutes before serving.
