Garlic Herb Chicken and Potatoes

Story

Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 4 medium potatoes, cubed
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 cup chicken broth
  • 1 tbsp butter
  • 1 tsp dried thyme (or 1 tbsp fresh)
  • 1 tsp rosemary
  • Salt and pepper to taste
  • Chopped parsley for garnish

Directions

  1. Preheat oven to 400°F (200°C).
  2. Heat olive oil and butter in an oven-safe skillet.
  3. Season and sear chicken thighs until golden, then set aside.
  4. Add onion and garlic to the same pan, sauté until fragrant.
  5. Add potatoes and chicken broth, then nestle the chicken back in.
  6. Bake for 35–40 minutes until chicken is cooked and potatoes are soft.
  7. Garnish with parsley and serve warm.
