Ingredients
For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the Filling:
- 16 oz (450g) cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
For the Blueberry Topping:
- 2 cups fresh blueberries
- 1/3 cup granulated sugar
- 1 tbsp lemon juice
- 1 tbsp cornstarch mixed with 2 tbsp water
Directions
- Mix crust ingredients and press into a 9-inch pie dish. Chill 15 minutes.
- Beat cream cheese, sugar, and vanilla until smooth.
- Whip cream to stiff peaks and fold into the cream cheese mixture.
- Spread filling over the crust and chill.
- Cook blueberries, sugar, lemon juice, and cornstarch mixture until thickened.
- Cool the topping, then spread over the cheesecake.
