Ingredients

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Filling:

  • 16 oz (450g) cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream

For the Blueberry Topping:

  • 2 cups fresh blueberries
  • 1/3 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch mixed with 2 tbsp water

Directions

  1. Mix crust ingredients and press into a 9-inch pie dish. Chill 15 minutes.
  2. Beat cream cheese, sugar, and vanilla until smooth.
  3. Whip cream to stiff peaks and fold into the cream cheese mixture.
  4. Spread filling over the crust and chill.
  5. Cook blueberries, sugar, lemon juice, and cornstarch mixture until thickened.
  6. Cool the topping, then spread over the cheesecake.
  7. Refrigerate for at least 3 hours before serving. Enjoy!
