Cheesy Baked Meatball Bites

Golden, cheesy meatball bites—crispy on the outside, tender and juicy inside. Perfect for gatherings or a cozy family dinner.

These balls are my husband’s ultimate weakness. He can finish the entire tray by himself!

Ingredients

  • 1 lb (450g) ground beef (or half beef / half pork)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan
  • 1 large egg
  • 2 tbsp milk
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded cheddar (or cheddar + mozzarella)
  • 2 tbsp chopped parsley (optional)
  • Olive oil spray or 1 tbsp olive oil

Directions

  1. Preheat oven to 400°F (200°C). Lightly grease a baking tray or line with foil.
  2. Mix breadcrumbs, Parmesan, egg, milk, garlic, oregano, salt and pepper in a bowl.
  3. Add the ground meat and combine gently—do not overwork.
  4. Shape into 12–16 even meatballs and place on the prepared tray. Lightly brush or spray with oil.
  5. Bake 12–15 minutes until almost cooked through.
  6. Top each meatball with shredded cheese and return to oven 3–5 minutes until cheese is melted and golden.
  7. Garnish with parsley and serve hot with your favorite dip or sauce.
