Beef & Potato Noodle Soup — Family Recipe
A cozy, flavorful soup made with ground beef, potatoes, and noodles simmered in a tomato broth — pure comfort in a bowl.
Story
A meal that brings back memories! My abuelita used to make this for my dad when he was a little boy in the ’50s, and my mom carried on the tradition. Now, I make it for my kids, and they ask for it every week. Some recipes never get old!
Ingredients
- 1 lb (400g) ground beef
- 2–3 tbsp vegetable or olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 3 medium potatoes, diced
- 7 oz (200g) noodles or vermicelli
- 14 oz (400g) tomato sauce or diluted tomato paste
- 4 cups (1 liter) beef broth or water
- Salt, black pepper, paprika, cumin (to taste)
- Chopped parsley for garnish
Directions
- Heat oil in a pot over medium heat. Add onion and sauté until soft.
- Add garlic and ground beef. Cook until browned and crumbly.
- Stir in tomato sauce and spices; cook for 2 minutes.
- Add potatoes and broth; bring to a boil, then simmer for 15 minutes.
- Add noodles and cook until tender, 6–10 minutes. Add more broth if needed.
- Adjust seasoning and serve hot with parsley on top.
