Snowball cookies covered in powdered sugar

Ingredients

  • 1 cup (225 g) unsalted butter, softened
  • ½ cup (65 g) powdered sugar (plus more for coating)
  • 2 teaspoons vanilla extract
  • 2 cups (250 g) all-purpose flour
  • 1 cup (120 g) finely chopped pecans or walnuts
  • ¼ teaspoon salt

Instructions

  1. Preheat oven: to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix: Cream butter, sugar, and vanilla until fluffy. Add flour, salt, and nuts. Stir until combined into a soft dough.
  3. Shape: Roll dough into 1-inch balls and place on the baking sheet about 1 inch apart.
  4. Bake: Bake for 12–15 minutes or until bottoms are lightly golden. Do not overbake.
  5. Coat: While warm, roll each cookie gently in powdered sugar. Cool completely and roll again for a perfect snowy finish.

Storage

  • Store in an airtight container for up to 1 week at room temperature.
  • They also freeze beautifully for up to 3 months!
