Green Chile Cast Iron Enchiladas 🌶️🧀

Ingredients
- 1 lb (450 g) ground beef or shredded chicken
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 cups green chile enchilada sauce (mild or spicy)
- 1 can (4 oz / 115 g) diced green chiles
- 1 tsp cumin
- Salt & pepper to taste
- 6 corn tortillas (cut in halves or quarters)
- 1 ½ cups shredded cheese (Monterey Jack or Mexican blend)
- Fresh cilantro, sour cream & avocado for serving
Instructions
- Preheat oven: to 375°F (190°C). Heat a cast iron skillet over medium heat.
- Cook filling: Add oil and onion; sauté until soft. Stir in beef/chicken, green chiles, cumin, salt & pepper. Cook 5–6 minutes.
- Assemble: Layer half the tortillas in the skillet, followed by meat mixture, a drizzle of enchilada sauce, and cheese. Repeat the layers, finishing with cheese on top.
- Bake: Place the skillet in the oven and bake 20–25 minutes, until bubbling and golden on top.
- Serve: Let rest 5 minutes before serving. Garnish with cilantro, sour cream, and avocado slices.
