Ingredients
- 1 cup (125g) all-purpose flour
- 1 cup (240ml) milk
- 3 large eggs
- ½ teaspoon salt
- 2–3 tablespoons oil, beef drippings, or butter (for the tin)
Instructions
- Preheat your oven to 425°F / 220°C. Place a muffin tin inside to heat.
- In a mixing bowl, whisk together the flour, milk, eggs, and salt until smooth and lump-free. Let the batter rest for 10–15 minutes.
- When the oven and tin are hot, add a little oil or drippings to each muffin cup (about ½ teaspoon) and return to the oven for 2–3 minutes until sizzling hot.
- Quickly pour the batter into each cup (fill halfway) and bake for 20–25 minutes until puffed up and golden brown.
- Do not open the oven door during baking — that’s the secret to perfect rise!
- Serve immediately with roast beef, gravy, or even jam for a fun twist!
