Cheesy Savory Reuben Bake 🧀
Layers of corned beef, tangy sauerkraut, Swiss cheese, and creamy dressing baked to golden perfection. Comfort food doesn’t get better than this!
Ingredients
- 8 lasagna noodles, cooked and drained
- 1 lb (450g) sliced corned beef, chopped
- 2 cups sauerkraut, drained well
- 2 cups shredded Swiss cheese (or mozzarella for a milder taste)
- 1 cup Thousand Island or Russian dressing
- ½ cup sour cream
- 2 tablespoons butter
- 1 small onion, finely diced
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a skillet, melt butter and sauté diced onion until soft and golden.
- In a bowl, mix together sour cream and Thousand Island dressing.
- Spread a thin layer of the dressing mixture on the bottom of the baking dish.
- Layer 3–4 noodles, then add corned beef, sauerkraut, Swiss cheese, and dressing mixture. Repeat layers until all ingredients are used, finishing with cheese on top.
- Cover with foil and bake for 20 minutes. Remove foil and bake another 10–15 minutes, until cheese is bubbly and lightly browned.
- Let rest for 10 minutes before slicing. Garnish with chopped parsley if desired.
🧀 Tip: Swap sauerkraut for caramelized onions if you prefer a milder, sweeter flavor. Pairs beautifully with rye bread or a side salad!
