Cheesy Savory Reuben Bake 🧀

Layers of corned beef, tangy sauerkraut, Swiss cheese, and creamy dressing baked to golden perfection. Comfort food doesn’t get better than this!

Cheesy Savory Reuben Bake

Ingredients

  • 8 lasagna noodles, cooked and drained
  • 1 lb (450g) sliced corned beef, chopped
  • 2 cups sauerkraut, drained well
  • 2 cups shredded Swiss cheese (or mozzarella for a milder taste)
  • 1 cup Thousand Island or Russian dressing
  • ½ cup sour cream
  • 2 tablespoons butter
  • 1 small onion, finely diced
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a skillet, melt butter and sauté diced onion until soft and golden.
  3. In a bowl, mix together sour cream and Thousand Island dressing.
  4. Spread a thin layer of the dressing mixture on the bottom of the baking dish.
  5. Layer 3–4 noodles, then add corned beef, sauerkraut, Swiss cheese, and dressing mixture. Repeat layers until all ingredients are used, finishing with cheese on top.
  6. Cover with foil and bake for 20 minutes. Remove foil and bake another 10–15 minutes, until cheese is bubbly and lightly browned.
  7. Let rest for 10 minutes before slicing. Garnish with chopped parsley if desired.
🧀 Tip: Swap sauerkraut for caramelized onions if you prefer a milder, sweeter flavor. Pairs beautifully with rye bread or a side salad!
