Basque Burnt Cheesecake

🧀 Ingredients

  • 340g (12 oz) Cream cheese
  • 80g (2.8 oz) Sugar
  • 3 Eggs (room temperature)
  • 3ml Vanilla extract
  • 1g Salt
  • 150g (5.3 oz) Whipping cream
  • 10g (0.4 oz) Corn starch or Cake flour

👩‍🍳 Instructions

  1. Preheat the oven to 230°C (450°F). Line a 6-inch round cake pan with parchment paper, making sure the paper extends above the edges for easy removal.
  2. In a mixing bowl, beat the cream cheese and sugar together until smooth and creamy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in vanilla extract and salt.
  5. Add whipping cream and mix until the batter is smooth.
  6. Sift in corn starch or cake flour and fold gently until combined — don’t overmix.
  7. Pour the batter into the prepared pan and tap lightly to remove air bubbles.
  8. Bake for 25–30 minutes, or until the top is deep brown and the center still slightly jiggly.
  9. Let the cheesecake cool completely before removing from the pan. Chill for at least 4 hours before slicing.
💡 Tip: The darker the top, the deeper the caramel flavor! Serve chilled with coffee or a drizzle of caramel for the ultimate dessert moment.
