Basque Burnt Cheesecake

Basque Burnt Cheesecake 🍰
“This Basque burnt cheesecake is super soft and sweet. The cheesecake looks burnt, but the taste is amazing — it’s sure to become your new family favorite!”
    
🧀 Ingredients
- 340g (12 oz) Cream cheese
 - 80g (2.8 oz) Sugar
 - 3 Eggs (room temperature)
 - 3ml Vanilla extract
 - 1g Salt
 - 150g (5.3 oz) Whipping cream
 - 10g (0.4 oz) Corn starch or Cake flour
 
👩🍳 Instructions
- Preheat the oven to 230°C (450°F). Line a 6-inch round cake pan with parchment paper, making sure the paper extends above the edges for easy removal.
 - In a mixing bowl, beat the cream cheese and sugar together until smooth and creamy.
 - Add eggs one at a time, mixing well after each addition.
 - Stir in vanilla extract and salt.
 - Add whipping cream and mix until the batter is smooth.
 - Sift in corn starch or cake flour and fold gently until combined — don’t overmix.
 - Pour the batter into the prepared pan and tap lightly to remove air bubbles.
 - Bake for 25–30 minutes, or until the top is deep brown and the center still slightly jiggly.
 - Let the cheesecake cool completely before removing from the pan. Chill for at least 4 hours before slicing.
 
      💡 Tip: The darker the top, the deeper the caramel flavor! Serve chilled with coffee or a drizzle of caramel for the ultimate dessert moment.
