  • 2 lbs beef stew meat, cut into chunks
  • 3 tbsp olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp thyme
  • 1 tsp rosemary
  • 4 carrots, sliced
  • 1 lb baby potatoes, halved
  • 2 tbsp flour (for thickening)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

  1. In a large pot or Dutch oven, heat olive oil over medium-high heat. Add beef and sear until browned on all sides. Remove and set aside.
  2. Add onions and garlic to the same pot; sautΓ© until softened.
  3. Stir in flour and cook for 1 minute, then add tomato paste and mix well.
  4. Pour in beef broth and Worcestershire sauce, scraping the bottom to release flavor.
  5. Return beef to the pot, then add thyme, rosemary, carrots, and potatoes.
  6. Bring to a boil, then reduce heat to low. Cover and simmer for 2 hours, stirring occasionally, until beef is fork-tender.
  7. Adjust seasoning with salt and pepper to taste.
  8. Garnish with fresh parsley before serving.
