Homestyle Beef Stew π²π₯π₯

π₯© Ingredients
- 2 lbs beef stew meat, cut into chunks
- 3 tbsp olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tsp thyme
- 1 tsp rosemary
- 4 carrots, sliced
- 1 lb baby potatoes, halved
- 2 tbsp flour (for thickening)
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
π₯ Instructions
- In a large pot or Dutch oven, heat olive oil over medium-high heat. Add beef and sear until browned on all sides. Remove and set aside.
- Add onions and garlic to the same pot; sautΓ© until softened.
- Stir in flour and cook for 1 minute, then add tomato paste and mix well.
- Pour in beef broth and Worcestershire sauce, scraping the bottom to release flavor.
- Return beef to the pot, then add thyme, rosemary, carrots, and potatoes.
- Bring to a boil, then reduce heat to low. Cover and simmer for 2 hours, stirring occasionally, until beef is fork-tender.
- Adjust seasoning with salt and pepper to taste.
- Garnish with fresh parsley before serving.
π‘ Tip: For extra depth, add Β½ cup of red wine when adding the broth β it makes the stew incredibly rich!
