Creamy Zucchini Cheddar Soup 🥣

My dad loves zucchini and I made this for his 70th birthday dinner — he was in heaven!

Creamy Zucchini Cheddar Soup

🥦 Ingredients

  • 4 medium zucchini, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp butter or olive oil
  • 2 cups vegetable or chicken broth
  • 1 cup milk or heavy cream
  • 1 cup shredded cheddar cheese (plus extra for garnish)
  • Salt and black pepper to taste

👩‍🍳 Instructions

  1. In a large pot, melt butter over medium heat. Add onion and garlic, sauté until soft and fragrant.
  2. Add chopped zucchini and cook for 5–7 minutes until tender.
  3. Pour in the broth, bring to a simmer, and cook for another 10 minutes.
  4. Use an immersion blender (or transfer to a regular blender) to puree until smooth.
  5. Return the soup to the pot, stir in milk or cream, and add shredded cheddar cheese.
  6. Stir until the cheese melts and the soup is creamy. Season with salt and pepper to taste.
  7. Serve warm, topped with extra cheese or a sprinkle of herbs if desired.
💚 Tip: Add a pinch of nutmeg or a handful of spinach for extra flavor and nutrients!
