Creamy Zucchini Cheddar Soup 🥣
My dad loves zucchini and I made this for his 70th birthday dinner — he was in heaven!
🥦 Ingredients
- 4 medium zucchini, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tbsp butter or olive oil
- 2 cups vegetable or chicken broth
- 1 cup milk or heavy cream
- 1 cup shredded cheddar cheese (plus extra for garnish)
- Salt and black pepper to taste
👩🍳 Instructions
- In a large pot, melt butter over medium heat. Add onion and garlic, sauté until soft and fragrant.
- Add chopped zucchini and cook for 5–7 minutes until tender.
- Pour in the broth, bring to a simmer, and cook for another 10 minutes.
- Use an immersion blender (or transfer to a regular blender) to puree until smooth.
- Return the soup to the pot, stir in milk or cream, and add shredded cheddar cheese.
- Stir until the cheese melts and the soup is creamy. Season with salt and pepper to taste.
- Serve warm, topped with extra cheese or a sprinkle of herbs if desired.
💚 Tip: Add a pinch of nutmeg or a handful of spinach for extra flavor and nutrients!
