Mississippi Mud Cake 🍫

Ingredients

  • 1 cup (2 sticks) unsalted butter, melted
  • ½ cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 4 large eggs
  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 cup chopped pecans (optional)
  • 1 tsp vanilla extract
  • 1½ cups mini marshmallows (or more to cover cake)

Chocolate Frosting

  • ½ cup butter (1 stick)
  • ¼ cup cocoa powder
  • ⅓ cup milk
  • 1 tsp vanilla extract
  • 3½ cups powdered sugar

Instructions

  1. Preheat oven: to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Make the batter: In a large bowl, combine melted butter and cocoa powder until smooth. Whisk in sugar and eggs until well blended.
  3. Add flour, baking powder, salt, vanilla, and pecans. Stir until just combined — don’t overmix.
  4. Bake: Pour into prepared dish and bake 30–35 minutes or until a toothpick inserted comes out mostly clean.
  5. Add marshmallows: Immediately after removing from oven, sprinkle marshmallows evenly over the hot cake. Return to oven for 2–3 minutes, just until they puff slightly. Remove and cool.
  6. Make frosting: In a saucepan over medium heat, combine butter, cocoa, and milk. Heat until just boiling, then remove from heat and whisk in vanilla and powdered sugar until smooth.
  7. Pour frosting: Spread warm frosting over the marshmallow layer while still soft. Let set for at least 30 minutes before cutting.
Tips 🍫:

  • For extra richness, add a handful of chocolate chips on top of the marshmallows before pouring frosting.
  • Best served slightly warm with a scoop of vanilla ice cream!
  • Can be made a day ahead — store covered at room temperature.
