Cheesy Ground Beef Rice Casserole 🧀🍚

Ingredients
- 1 lb (450g) ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups cooked rice (white or jasmine)
- 1 can (10.5 oz) cream of mushroom soup
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese (plus more for topping)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp paprika (optional)
- 1 tbsp olive oil or butter
Instructions
- Preheat oven: Set oven to 350°F (175°C) and lightly grease a 9×13″ baking dish.
- Cook beef: In a skillet over medium heat, add olive oil, then brown the ground beef with onions and garlic until no pink remains. Drain excess fat.
- Mix casserole base: In a large bowl, combine the cooked beef, cooked rice, mushroom soup, sour cream, salt, pepper, paprika, and 1 cup cheese.
- Transfer to dish: Pour mixture into the prepared baking dish and spread evenly.
- Top with cheese: Sprinkle extra cheddar cheese on top for that melty layer.
- Bake: Bake uncovered for 20–25 minutes, until cheese is bubbly and slightly golden.
- Garnish & serve: Sprinkle chopped parsley or chives before serving. Serve hot and enjoy!
Tip 💡: You can swap cream of mushroom with cream of chicken or add veggies like peas, corn, or bell peppers for extra texture.
