Cheesy Ground Beef Rice Casserole 🧀🍚

“My husband said he doesn’t like rice… now he’s asking when I’m making it again.”

Prep: 10 mins
Cook: 30 mins
Total: 40 mins
Serves: 4–6

Ingredients

  • 1 lb (450g) ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked rice (white or jasmine)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese (plus more for topping)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp paprika (optional)
  • 1 tbsp olive oil or butter

Instructions

  1. Preheat oven: Set oven to 350°F (175°C) and lightly grease a 9×13″ baking dish.
  2. Cook beef: In a skillet over medium heat, add olive oil, then brown the ground beef with onions and garlic until no pink remains. Drain excess fat.
  3. Mix casserole base: In a large bowl, combine the cooked beef, cooked rice, mushroom soup, sour cream, salt, pepper, paprika, and 1 cup cheese.
  4. Transfer to dish: Pour mixture into the prepared baking dish and spread evenly.
  5. Top with cheese: Sprinkle extra cheddar cheese on top for that melty layer.
  6. Bake: Bake uncovered for 20–25 minutes, until cheese is bubbly and slightly golden.
  7. Garnish & serve: Sprinkle chopped parsley or chives before serving. Serve hot and enjoy!
Tip 💡: You can swap cream of mushroom with cream of chicken or add veggies like peas, corn, or bell peppers for extra texture.
