Ingredients

  • 8 chicken drumsticks (skin-on)
  • 1/2 cup all-purpose flour
  • 1/2 tsp cayenne pepper
  • 4–5 dashes hot sauce (adjust to taste)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil or melted butter (for brushing)
  • 1/2 cup BBQ sauce (optional for glazing)

Instructions

  1. Preheat oven: Set to 400°F (200°C). Line a roasting pan with foil and lightly grease it.
  2. Prepare coating: In a large bowl, mix flour, cayenne, garlic powder, onion powder, paprika, salt, and pepper.
  3. Season chicken: Pat chicken legs dry with a paper towel. Add hot sauce and toss well to coat evenly.
  4. Coat with flour: Dredge each leg in the seasoned flour mixture, shaking off any excess.
  5. Arrange & drizzle: Place chicken legs on the baking sheet. Drizzle or brush lightly with olive oil or melted butter.
  6. Roast: Bake for 40–45 minutes, turning once halfway through, until golden brown and crispy.
  7. Optional glaze: Brush BBQ sauce on top during the last 5 minutes for a smoky finish.
  8. Serve hot: Let cool slightly and serve with fries or coleslaw. 🍟
Tip 💡: For extra crunch, place chicken on a wire rack set over the baking sheet — this lets hot air circulate all around.
