Ingredients
- 6 medium potatoes, peeled and diced
- 3 hard-boiled eggs, chopped
- 1/2 cup mayonnaise
- 1/4 cup sour cream (optional for extra creaminess)
- 1 tablespoon yellow mustard
- 1/2 cup celery, finely chopped
- 1/4 cup red onion, finely chopped
- 1 tablespoon sweet pickle relish (optional)
- Salt and pepper, to taste
- Paprika, for garnish
Instructions
- Place diced potatoes in a large pot, cover with water, and bring to a boil.
Cook until tender but not mushy, about 10–12 minutes. Drain and cool slightly. - In a large bowl, combine mayonnaise, sour cream, mustard, salt, and pepper.
Mix well to create a creamy dressing. - Add the cooled potatoes, chopped eggs, celery, onion, and relish.
Gently fold everything together until evenly coated. - Taste and adjust seasoning as needed.
- Cover and chill in the refrigerator for at least 1 hour before serving.
Sprinkle with paprika just before serving for color.
Pro Tip: For extra flavor, add a splash of pickle juice or a spoon of Dijon mustard!
