Crispy Chicken Fritters 🐔🧀

“My mother-in-law hardly eats anything these days, but she tore this up! The rest of the family loved it just as much. Made as directed. Going into my recipe box and will be used over and over!”

Ingredients:

  • 600g (about 1.3 lb) chicken breast, finely chopped or coarsely ground
  • 2 large eggs
  • 1/2 cup mayonnaise or Greek yogurt
  • 1 cup shredded cheese (cheddar + mozzarella mix works great)
  • 1/2 cup all-purpose flour (or almond flour for a low-carb option)
  • 2 cloves garlic, minced
  • 2 tablespoons chopped parsley or green onions
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon baking powder (optional for fluffier texture)
  • Oil for frying

Instructions:

  1. In a large bowl, combine the chopped chicken, eggs, mayonnaise, cheese, garlic, and herbs.
  2. Add the flour, seasonings, and baking powder. Mix until a thick batter forms. Let rest for 10–15 minutes.
  3. Heat a thin layer of oil in a skillet over medium heat.
  4. Scoop about 2 tablespoons of batter for each fritter and flatten slightly in the pan.
  5. Fry 3–4 minutes per side, until golden brown and cooked through (internal temp 165°F / 74°C).
  6. Drain on paper towels and serve hot.

Tips & Variations 🌿

  • Air Fryer: Cook at 375°F (190°C) for 10–12 minutes, flipping halfway.
  • Add finely chopped chili for a spicy kick 🌶️.
  • Pair with ranch dressing, honey mustard, or garlic sauce.
  • Store leftovers in the fridge for up to 3 days and reheat in an oven or air fryer to keep them crispy.
