Ingredients

  • 1 can (28 oz) whole tomatoes with juice
  • 2 cans (10 oz each) Rotel diced tomatoes and green chilies
  • ¼ cup chopped onion
  • 1 clove garlic, minced
  • 1 whole jalapeño, quartered and sliced thin
  • ¼ teaspoon sugar
  • ¼ teaspoon salt
  • ¼ teaspoon ground cumin
  • ½ cup chopped cilantro (or more to taste!)
  • Juice of ½ lime

Directions

  1. In a large mixing bowl, combine the whole tomatoes with juice and the Rotel diced tomatoes and green chilies.
  2. Add onion, garlic, and jalapeño. Stir well to mix everything evenly.
  3. Sprinkle in sugar, salt, and cumin. Stir again until the seasonings are evenly distributed.
  4. Gently fold in the chopped cilantro, adjusting the amount to your preference.
  5. Squeeze in the lime juice and mix again to brighten up the flavors.
