This creamy delight is known in our house as “Amish Snow Day Soup” — the kind of hearty, comforting bowl that makes cold evenings feel warm again. Made with tender potatoes, sweet corn, and savory ham, it’s the definition of cozy comfort food! 🤍
Ingredients
- 2 tablespoons butter
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cups potatoes, peeled and cubed
- 2 cups ham, diced (or use smoked sausage)
- 1 can (15 oz) corn, drained
- 3 cups chicken broth
- 2 cups milk
- 2 tablespoons all-purpose flour
- 1 teaspoon garlic powder
- ½ teaspoon dried thyme
- Salt and black pepper, to taste
Instructions
- Sauté Vegetables: In a large pot, melt butter over medium heat. Add onion, carrots, and celery; cook until softened (about 5 minutes).
- Add Base Ingredients: Stir in potatoes, ham, corn, and chicken broth. Bring to a boil, then reduce heat and simmer for 20–25 minutes, or until potatoes are tender.
- Make the Cream Base: In a separate bowl, whisk together flour and milk until smooth. Slowly add this mixture to the soup, stirring continuously.
- Season & Thicken: Add garlic powder, thyme, salt, and pepper. Simmer another 10 minutes until soup thickens and becomes creamy.
- Serve: Ladle into bowls and garnish with extra black pepper or a sprinkle of parsley. Serve warm with crusty bread or biscuits. 🥖
