🫐 Homemade Blueberry Cobbler
This warm, golden Blueberry Cobbler is a true comfort dessert — bursting with juicy berries and topped with a soft, buttery crust. It’s so delicious, you’ll want to make it again and again!
🧾 Ingredients
- 4 cups fresh or frozen blueberries
- 1 cup granulated sugar
- 1 tbsp lemon juice
- 2 tsp cornstarch (for thickening)
- 1 cup all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- ½ cup unsalted butter, melted
- ¾ cup milk
- 1 tsp vanilla extract
- 1 tbsp coarse sugar (optional, for topping)
👩🍳 Instructions
- Preheat your oven to 350°F (175°C).
- In a saucepan, combine blueberries, sugar, lemon juice, and cornstarch. Cook over medium heat for 5–6 minutes until bubbly and slightly thickened. Pour into a buttered baking dish.
- In a mixing bowl, whisk together flour, baking powder, and salt. Add melted butter, milk, and vanilla extract, stirring until smooth.
- Spoon dollops of the batter over the berry mixture — it will spread as it bakes. Sprinkle with coarse sugar if desired.
- Bake for 35–40 minutes or until the topping is golden brown and the filling is bubbling around the edges.
- Let cool slightly before serving. Enjoy warm with a scoop of vanilla ice cream or whipped cream!
💡 Tip: You can mix in a handful of raspberries or blackberries for a mixed-berry cobbler twist.
