This warm, golden Blueberry Cobbler is a true comfort dessert — bursting with juicy berries and topped with a soft, buttery crust. It’s so delicious, you’ll want to make it again and again!

🧾 Ingredients

  • 4 cups fresh or frozen blueberries
  • 1 cup granulated sugar
  • 1 tbsp lemon juice
  • 2 tsp cornstarch (for thickening)
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, melted
  • ¾ cup milk
  • 1 tsp vanilla extract
  • 1 tbsp coarse sugar (optional, for topping)

👩‍🍳 Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a saucepan, combine blueberries, sugar, lemon juice, and cornstarch. Cook over medium heat for 5–6 minutes until bubbly and slightly thickened. Pour into a buttered baking dish.
  3. In a mixing bowl, whisk together flour, baking powder, and salt. Add melted butter, milk, and vanilla extract, stirring until smooth.
  4. Spoon dollops of the batter over the berry mixture — it will spread as it bakes. Sprinkle with coarse sugar if desired.
  5. Bake for 35–40 minutes or until the topping is golden brown and the filling is bubbling around the edges.
  6. Let cool slightly before serving. Enjoy warm with a scoop of vanilla ice cream or whipped cream!
