Baked Chicken Thighs are a delicious and very simple main dish. These chicken thighs have a perfectly crispy skin and extra juicy meat! They are perfect served alongside mashed potatoes or scalloped potatoes.

Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried thyme
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp butter (optional, for extra crispiness)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven: to 425°F (220°C). Pat the chicken thighs dry with paper towels.
  2. Season: In a small bowl, mix paprika, garlic powder, onion powder, thyme, salt, and pepper. Rub the mixture evenly over the chicken thighs.
  3. Sear (optional): Heat olive oil in a skillet over medium-high heat. Sear chicken thighs, skin-side down, for 2–3 minutes until golden brown.
  4. Bake: Transfer chicken to a baking dish, skin-side up. Add small butter pieces on top if desired. Bake for 35–40 minutes or until internal temperature reaches 165°F (74°C).
  5. Finish: Broil for 2–3 minutes to crisp up the skin, then remove and let rest for 5 minutes.
  6. Serve: Garnish with chopped parsley and serve with mashed or scalloped potatoes.
💡 Tip: For extra flavor, add a few garlic cloves and lemon slices to the pan before baking!
