Creamy Slow Cooker Potato Soup
A comforting, cheesy potato soup slow-cooked to perfection with smoky bacon and rich creamy broth.
Ingredients
- 6 slices bacon, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 6 cups diced potatoes
- 4 cups chicken broth
- Salt, pepper & paprika to taste
- 1 cup heavy cream or half-and-half
- 1½ cups shredded cheddar cheese
- 2 tbsp butter (optional)
- 2 tbsp flour or cornstarch slurry (optional)
- Green onions & parsley for garnish

- Prep: 15 minutes
- Cook: 6 hours (LOW) or 3 hours (HIGH)
- Total: ~6 hours 15 minutes

Tips
- Add diced carrots or celery for more texture.
- Substitute ham for bacon for a smoky twist.

Directions
- Cook bacon: In a skillet, crisp bacon and set aside. Reserve 1 tbsp of drippings.
- Sauté aromatics: Sauté onion and garlic 2–3 minutes. Add to slow cooker.
- Combine: Add potatoes, broth, salt, pepper, and paprika. Stir well.
- Cook: Cover and cook on LOW 6–7 hours or HIGH 3–4 hours.
- Thicken: Mash some potatoes or stir in a thickener.
- Finish: Stir in cream, cheese, and half the bacon. Melt together 10–15 minutes.
- Serve: Garnish with bacon, parsley, and green onions. Enjoy warm!
