Creamy Slow Cooker Potato Soup with Bacon








Creamy Slow Cooker Potato Soup

This is so delicious, you’d be happy eating it daily without ever getting bored!

A comforting, cheesy potato soup slow-cooked to perfection with smoky bacon and rich creamy broth.

Ingredients

  • 6 slices bacon, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 6 cups diced potatoes
  • 4 cups chicken broth
  • Salt, pepper & paprika to taste
  • 1 cup heavy cream or half-and-half
  • 1½ cups shredded cheddar cheese
  • 2 tbsp butter (optional)
  • 2 tbsp flour or cornstarch slurry (optional)
  • Green onions & parsley for garnish

Time & Yield

  • Prep: 15 minutes
  • Cook: 6 hours (LOW) or 3 hours (HIGH)
  • Total: ~6 hours 15 minutes
  • Serves: 6

Tips

  • Add diced carrots or celery for more texture.
  • Substitute ham for bacon for a smoky twist.
  • Top with sour cream or extra cheese before serving.

Directions

  1. Cook bacon: In a skillet, crisp bacon and set aside. Reserve 1 tbsp of drippings.
  2. Sauté aromatics: Sauté onion and garlic 2–3 minutes. Add to slow cooker.
  3. Combine: Add potatoes, broth, salt, pepper, and paprika. Stir well.
  4. Cook: Cover and cook on LOW 6–7 hours or HIGH 3–4 hours.
  5. Thicken: Mash some potatoes or stir in a thickener.
  6. Finish: Stir in cream, cheese, and half the bacon. Melt together 10–15 minutes.
  7. Serve: Garnish with bacon, parsley, and green onions. Enjoy warm!
