Baked Sweet and Sour Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup cornstarch
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup ketchup
  • 1/2 cup apple cider vinegar
  • 2 tbsp soy sauce
  • 1 tsp garlic powder
  • 1/2 tsp sea salt

Instructions:

  1. Preheat your oven to 325°F (163°C). Line a 13 x 9-inch baking pan with parchment paper and set aside.
  2. Season the chicken pieces with salt and pepper.
  3. Place the cornstarch in a large Ziploc bag. Add the chicken pieces, seal the bag, and shake to coat the chicken evenly.
  4. In a shallow bowl, beat the eggs.
  5. Heat the vegetable oil in a skillet over medium-high heat until hot.
  6. Dip each cornstarch-coated chicken piece into the beaten eggs, ensuring they are well coated.
  7. Sear the coated chicken pieces in the skillet until golden brown, then transfer them to the prepared baking pan.
  8. In a medium bowl, combine the sugar, ketchup, apple cider vinegar, soy sauce, garlic powder, and sea salt. Whisk until well blended.
  9. Pour the sweet and sour sauce over the chicken in the baking pan.
  10. Bake in the preheated oven for about 1 hour, tossing the chicken halfway through to ensure even coating and cooking.
  11. Once the chicken is fully cooked and the sauce has thickened, remove from the oven.
  12. Serve the Baked Sweet and Sour Chicken with rice or your favorite side dish.
