Baked Sweet and Sour Chicken
Ingredients:
- 4 boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 cup cornstarch
- 2 large eggs
- 1/4 cup vegetable oil
- 1/2 cup granulated sugar
- 1/4 cup ketchup
- 1/2 cup apple cider vinegar
- 2 tbsp soy sauce
- 1 tsp garlic powder
- 1/2 tsp sea salt
Instructions:
- Preheat your oven to 325Ā°F (163Ā°C). Line a 13 x 9-inch baking pan with parchment paper and set aside.
- Season the chicken pieces with salt and pepper.
- Place the cornstarch in a large Ziploc bag. Add the chicken pieces, seal the bag, and shake to coat the chicken evenly.
- In a shallow bowl, beat the eggs.
- Heat the vegetable oil in a skillet over medium-high heat until hot.
- Dip each cornstarch-coated chicken piece into the beaten eggs, ensuring they are well coated.
- Sear the coated chicken pieces in the skillet until golden brown, then transfer them to the prepared baking pan.
- In a medium bowl, combine the sugar, ketchup, apple cider vinegar, soy sauce, garlic powder, and sea salt. Whisk until well blended.
- Pour the sweet and sour sauce over the chicken in the baking pan.
- Bake in the preheated oven for about 1 hour, tossing the chicken halfway through to ensure even coating and cooking.
- Once the chicken is fully cooked and the sauce has thickened, remove from the oven.
- Serve the Baked Sweet and Sour Chicken with rice or your favorite side dish.
