Irresistible Apple-Pecan Cake

This delightful cake was created spontaneously, and now it’s a family favorite that everyone eagerly requests. Here’s how to make it:

Ingredients:

  • 3/4 cup vegetable oil
  • 2 cups granulated sugar
  • 4 large eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon sea salt
  • 2 teaspoons vanilla extract
  • 3 1/2 cups Granny Smith apples, peeled and diced (approximately 3-4 apples)
  • 1 cup chopped pecans
  • 1/3 cup unsalted butter
  • 1/2 cup light brown sugar
  • 1/2 cup milk
  • 1 teaspoon vanilla extract (for icing)

Instructions:

  1. Preheat the Oven:
Preheat your oven to 325°F (163°C). This ensures even baking and a beautifully risen cake.
  2. Prepare Wet Ingredients:
In a large bowl, combine 3/4 cup vegetable oil, 2 cups granulated sugar, and 4 large eggs. Beat with a whisk or an electric mixer until the mixture is smooth and slightly thickened, indicating that the eggs and sugar are well incorporated.
  3. Mix Dry Ingredients:
In another bowl, whisk together 3 cups all-purpose flour, 1 teaspoon baking soda, 1/2 teaspoon ground cinnamon, and 1/2 teaspoon sea salt. Sift if necessary to ensure a smooth texture, which promotes even baking.
  4. Combine Wet and Dry Ingredients:
Gradually fold the dry ingredients into the wet mixture, stirring gently until just combined. Avoid overmixing to keep the cake light and tender. Stir in 2 teaspoons vanilla extract.
  5. Incorporate Apples and Pecans:
Gently fold in 3 1/2 cups diced Granny Smith apples and 1 cup chopped pecans. The apples contribute moisture and flavor, while the pecans add a delightful crunch. Ensure they are evenly distributed throughout the batter.
  6. Prepare the Pan:
Grease and flour a tube pan or two loaf pans thoroughly to prevent sticking. Pour the batter into the prepared pan(s), spreading it evenly.
  7. Bake:
Place the pan(s) in the preheated oven and bake for approximately 1 hour. Check for doneness by inserting a toothpick into the center of the cake. It should come out clean or with a few moist crumbs. If using loaf pans, check them around 50 minutes, as they may bake faster than a tube pan.

Icing (Optional):

  • 1 teaspoon vanilla extract

Enjoy your homemade apple-pecan cake, perfect for any occasion or just a special treat!
