Tender beef chuck roast slow-cooked to perfection with hearty potatoes and sweet carrots.

โจ Ingredients:
- 3 lbs beef chuck roast (Halal-certified) ๐
- 2 tbsp olive oil
- 1 large onion, chopped ๐ง
- 3 garlic cloves, minced ๐ง
- 3 large carrots, peeled & cut into chunks ๐ฅ
- 2 lbs baby potatoes, halved ๐ฅ
- 3 cups beef broth
- 2 tbsp tomato paste
- 1 tsp dried thyme ๐ฟ
- 1 tsp rosemary ๐ฟ
- Salt & pepper to taste ๐ง
๐ฅ Instructions:
- Season the beef with salt and pepper. Sear in olive oil until browned on all sides.
- Add onion and garlic to the pot, sautรฉ until fragrant.
- Stir in tomato paste, thyme, rosemary, and beef broth.
- Add carrots and potatoes, cover tightly, and cook:
- Oven: 325ยฐF (160ยฐC) for 3โ4 hours
- Slow cooker: Low 8 hours / High 5 hours
- Once fork-tender, shred the beef and serve with veggies and sauce. ๐ฟ
