French Onion Meatloaf
This flavor combo is insane! We couldn’t stop eating it! 😍
Ingredients
- 2 lbs (900 g) ground beef
- 1 cup breadcrumbs (panko or regular)
- 2 large eggs, lightly beaten
- 1 cup shredded mozzarella (plus extra for topping)
- ½ cup grated Parmesan cheese
- 1 tbsp Worcestershire sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp olive oil
- 2 large onions, thinly sliced
- 2 tbsp butter
- 1 cup beef broth
Instructions
- Caramelize onions: Heat olive oil and butter in a skillet over medium heat. Add sliced onions and cook slowly until golden brown (20–25 minutes). Pour in beef broth, simmer 5 minutes until slightly reduced. Set aside.
- Make meatloaf mix: In a bowl, combine ground beef, breadcrumbs, eggs, mozzarella, Parmesan, Worcestershire, garlic powder, onion powder, thyme, salt, and pepper. Mix until just combined.
- Shape & bake: Preheat oven to 375°F (190°C). Shape mixture into a loaf and place in a greased pan. Spread half the caramelized onions on top.
- Bake: Bake for 40–45 minutes. Remove, top with remaining onions and mozzarella. Return to oven 10 minutes until cheese is bubbly and golden.
- Serve: Rest 10 minutes before slicing. Pair with mashed potatoes, roasted veggies, or crusty bread.
Notes
Tips:
• Add a splash of balsamic vinegar to onions for extra depth.
• Mix ground beef with ground pork for even juicier results.
• Store leftovers in the fridge up to 3 days — reheats great!
