Grandmother’s Quick Beef & Potato Casserole

Creamy potatoes layered with flavorful ground beef and topped with bubbly cheese. Minimal prep, maximum comfort.

Ingredients

  • 1 lb (450 g) ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 medium potatoes, peeled and thinly sliced
  • 2 tbsp olive oil or butter
  • 1 tsp paprika
  • 1 tsp salt (to taste)
  • ½ tsp black pepper
  • 1 cup (240 ml) milk or cream
  • 2 tbsp all-purpose flour (optional, for thicker sauce)
  • 1 cup shredded mozzarella (or cheddar)
  • ½ cup grated Parmesan
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook beef: Heat oil/butter in a skillet over medium heat. SautƩ onion 2 minutes, add garlic 30 seconds. Add ground beef, paprika, salt, and pepper; cook until browned. Set aside.
  2. Make quick sauce: Whisk milk (or cream) with flour until smooth. Warm in a saucepan, stirring, 2–3 minutes until slightly thickened. (Skip flour for a lighter sauce.)
  3. Assemble: Grease a 9-inch (23 cm) baking dish. Layer: potatoes → some beef → a little sauce. Repeat to use everything. Top with mozzarella and Parmesan.
  4. Bake: Cover with foil and bake at 375°F (190°C) for 35–40 minutes. Uncover and bake 8–10 minutes more until golden and bubbly.
  5. Serve: Rest 5 minutes. Garnish with parsley and enjoy hot.

Notes

Speed tip: Slice potatoes very thin (mandoline) so they cook fast. You can also parboil slices for 3 minutes.
  • Add a layer of tomato sauce or 2 tbsp tomato paste to the beef for a lasagna-like vibe.
  • Swap beef for ground turkey or add sautĆ©ed mushrooms for extra flavor.
