Blackened Salmon with Creamy Garlic Spinach & Shrimp

Ingredients:

For the Salmon:

  • 2 salmon fillets (6 oz each), skin on or off as you prefer
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne (adjust to taste)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp dried thyme
  • 1/4 tsp dried oregano
  • Kosher salt and freshly ground black pepper

For the Shrimp:

  • 8 oz peeled & deveined shrimp
  • 1/2 tbsp olive oil
  • Pinch of the blackening mix (from above)
  • Salt & pepper

For the Creamy Garlic Spinach:

  • 1 tbsp butter
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/3 cup heavy cream (or half-and-half for a lighter version)
  • 2 tbsp cream cheese or 2 tbsp grated Parmesan (optional, for extra richness)
  • 6 cups baby spinach (about 6–8 oz)
  • 1 tsp lemon juice
  • Salt & pepper to taste

Finishing:

  • Lemon wedges
  • Chopped parsley for garnish (optional)

📝 Directions 📝

  1. Make the blackening spice: in a small bowl combine paprika, smoked paprika, cayenne, garlic powder, onion powder, thyme, oregano, 1/2 tsp salt and 1/4 tsp pepper. Pat the salmon dry and rub both sides with the spice mix.
  2. Heat a large heavy skillet (cast-iron is perfect) over medium-high heat with 1 tbsp olive oil. When shimmering, add salmon, presentation side down first. Sear without moving 4–5 minutes until a dark crust forms, flip and cook 3–4 minutes more until just cooked through. Transfer to a plate and loosely tent with foil to rest.
  3. In the same skillet, add 1/2 tbsp olive oil and the shrimp seasoned with a pinch of the blackening mix, salt and pepper. Cook 1–2 minutes per side until pink and opaque. Remove shrimp and set aside with the salmon.
  4. Reduce heat to medium and add butter + 1 tbsp olive oil to the skillet. Add minced garlic and sauté 30–45 seconds until fragrant (don’t brown). Pour in the cream and cream cheese/Parmesan if using; stir to melt and combine.
  5. Add the spinach in batches, stirring until wilted into the creamy sauce. Finish with 1 tsp lemon juice, and season to taste with salt and pepper. If the sauce is too thick, splash in a tablespoon of water.
  6. Return shrimp to the pan briefly to warm through and coat with sauce. Plate a bed of creamy garlic spinach, top with a salmon fillet and arrange shrimp alongside. Garnish with lemon wedges and chopped parsley.
