Mom’s Famous Cream Puffs Recipe
Ingredients:
- 8 tablespoons (1 stick) of butter
- 1 cup of water
- 1 teaspoon of vanilla extract
- 4 large eggs
- 1 cup of all-purpose flour
For Mom’s Famous Filling:
- 1 pint of heavy cream
- 1 package (3.4 ounces) of instant vanilla pudding mix
- ⅓ cup of milk
Yields: Approx. 16 cream puffs
Instructions:
- In a medium-sized saucepan, bring the butter, water, and vanilla extract to a boil over medium heat.
- Gradually add the flour, stirring continuously until the mixture pulls away from the sides of the pan and forms a smooth dough ball.
- Remove from heat and allow the dough to cool slightly.
- Add the eggs one at a time, beating well after each addition until the dough becomes smooth and glossy.
- Using a spoon or piping bag, place small mounds of dough onto a baking sheet lined with parchment paper.
- Preheat the oven to 400°F (200°C) and bake for 25-30 minutes, or until the cream puffs are golden brown and puffed up.
- Once baked, remove from the oven and let the cream puffs cool completely.
For the Filling:
- In a large mixing bowl, combine the heavy cream, vanilla pudding mix, and milk.
- Beat the mixture using an electric mixer until it thickens to a consistency similar to whipped cream.
To Assemble:
- Once the cream puffs have cooled, carefully slice each one in half.
- Generously fill the cream puffs with the prepared filling.
- Lightly dust with powdered sugar before serving.
