Baked Salmon in Foil with Asparagus and Garlic Lemon Butter Sauce
Ingredients:
- 4 skinless salmon fillets
- 1 pound (454 grams) asparagus tips
- 1/3 cup (75 grams) melted butter
- 1/3 cup (125 ml) freshly squeezed lemon juice
- 4 garlic cloves, finely minced
- 2 teaspoons (10 ml) freshly chopped parsley
- Salt and pepper, to taste
- 2/3 cup (65 grams) freshly grated Parmesan cheese
- Fresh parsley and lemon wedges for garnish
Instructions:
- Preheat your oven to 400Ā°F (200Ā°C).
- Lay each salmon fillet in the center of a 12×18 inch (30×45 cm) piece of aluminum foil.
- Divide the asparagus into four portions, arranging them evenly around the salmon.
- In a small bowl, mix the melted butter, lemon juice, minced garlic, and chopped parsley. Drizzle this mixture generously over the salmon and asparagus.
- Season with salt and pepper to taste, then sprinkle 2 to 3 tablespoons of grated Parmesan cheese over the top.
- Fold the foil over the salmon and asparagus, sealing the edges tightly to create a packet.
- Place the foil packets on a baking sheet and bake for about 12-15 minutes, or until the salmon is cooked through and flaky.
- Serve garnished with fresh parsley and lemon wedges.
