Crunchy Cabbage Salad with Tangy Vinaigrette Recipe

Ingredients:

  • 1 large cucumber, finely chopped
  • ⅓ head of green cabbage, shredded
  • ⅓ head of red cabbage, shredded
  • 1 medium onion, thinly sliced or julienned
  • 1 medium carrot, julienned or grated
  • 2 cloves garlic, minced (around 20 grams)
  • ¼ cup walnuts, roughly chopped
  • ¼ teaspoon salt, divided (adjust to taste)
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons mustard (use your favorite variety)
  • 1 tablespoon honey (natural)
  • 1 teaspoon rice vinegar
  • 1 teaspoon soy sauce

Instructions:

1. Prepare the Vegetables:

In a large salad bowl, combine the shredded red and green cabbage. Sprinkle the green cabbage with ¼ teaspoon of salt and gently massage it to soften the texture. Add the chopped cucumber to the cabbage mixture. If desired, sprinkle a little of the remaining salt over the cucumber. Toss in the thinly sliced onion and julienned or grated carrot.
