Lemon & Garlic Chicken Bites
Ingredients
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- Ā½ teaspoon dried oregano
- Ā½ teaspoon dried basil
- 2 tablespoons olive oil
- 2 tablespoons fresh parsley, finely chopped
- Ā½ teaspoon kosher salt
- Ā¼ teaspoon black pepper
- 4 tablespoons unsalted butter, divided
- 2 tablespoons minced garlic
- Juice of Ā½ medium lemon (approximately 2 tablespoons)
Instructions
- In a small bowl, mix the oregano, basil, parsley, salt, and pepper. Drizzle the olive oil over the chicken pieces, ensuring they are evenly coated, then sprinkle the herb mixture over all sides.
- Heat a 12-inch skillet over medium heat. Add 2 tablespoons of butter and swirl the pan to coat the bottom. Once melted, add the chicken in a single layer to avoid overcrowding.
- Cook the chicken for 8-10 minutes, turning halfway through, until the pieces are golden brown and mostly cooked through.
- Add the remaining 2 tablespoons of butter to the skillet. Once melted, stir in the minced garlic and cook for another minute until fragrant. Ensure the chicken is fully cooked to an internal temperature of 165Ā°F.
- Finally, drizzle the lemon juice over the chicken and stir to combine.
