Homemade Tapioca Pudding: A Classic Dessert Recipe

Tapioca pudding is one of those desserts that tends to divide people—either you love it, or you don’t. Personally, I’ve always been a fan, perhaps because I grew up enjoying the homemade version. For me, it’s a nostalgic treat, bringing back fond memories with each creamy, sweet bite.

While it may not be as common to see people making tapioca pudding from scratch nowadays, I’m a firm believer that homemade is the only way to go. Store-bought versions simply can’t compare to the rich, comforting flavor of a fresh batch. Plus, making it at home is much simpler than you might think!

Ingredients:

  • ½ cup small pearl tapioca
  • 4 cups whole or 2% milk
  • ¾ cup white sugar
  • 3 eggs
  • ¾ cup white sugar (additional)
  • 1 teaspoon vanilla extract

Instructions:

  1. Prepare the Tapioca: Begin by rinsing the tapioca pearls and placing them in a small bowl. Cover with water and let them soak for 45-60 minutes.
  2. Simmer the Milk: In a large saucepan, combine the milk and the first ¾ cup of sugar. Heat over medium heat, stirring occasionally, until the mixture begins to simmer. Once small bubbles appear, add the soaked tapioca pearls and reduce the heat to a gentle simmer. Stir frequently and cook for an additional 15-20 minutes, or until the tapioca pearls become translucent.
  3. Beat the Eggs: While the tapioca pearls cook, whisk together the eggs and the remaining ¾ cup of sugar in a medium-sized bowl.
  4. Temper the Eggs: Slowly add about ⅓ cup of the hot tapioca mixture to the egg mixture, whisking constantly to temper the eggs. Gradually add half of the hot mixture to the eggs, continuing to stir.
  5. Combine the Mixtures: Pour the egg mixture back into the saucepan with the remaining tapioca. Stir continuously while cooking for another 3-5 minutes, or until the pudding thickens slightly. Remember, it will continue to thicken as it cools.
  6. Add Vanilla and Chill: Remove from heat and stir in the vanilla extract. Divide the pudding into serving dishes and allow it to cool before refrigerating. Serve chilled.

This creamy, homemade tapioca pudding is a delicious way to bring a little nostalgia to your dessert table.
