Homemade Tapioca Pudding: A Classic Dessert Recipe
Tapioca pudding is one of those desserts that tends to divide people—either you love it, or you don’t. Personally, I’ve always been a fan, perhaps because I grew up enjoying the homemade version. For me, it’s a nostalgic treat, bringing back fond memories with each creamy, sweet bite.
While it may not be as common to see people making tapioca pudding from scratch nowadays, I’m a firm believer that homemade is the only way to go. Store-bought versions simply can’t compare to the rich, comforting flavor of a fresh batch. Plus, making it at home is much simpler than you might think!
Ingredients:
- ½ cup small pearl tapioca
- 4 cups whole or 2% milk
- ¾ cup white sugar
- 3 eggs
- ¾ cup white sugar (additional)
- 1 teaspoon vanilla extract
Instructions:
- Prepare the Tapioca: Begin by rinsing the tapioca pearls and placing them in a small bowl. Cover with water and let them soak for 45-60 minutes.
- Simmer the Milk: In a large saucepan, combine the milk and the first ¾ cup of sugar. Heat over medium heat, stirring occasionally, until the mixture begins to simmer. Once small bubbles appear, add the soaked tapioca pearls and reduce the heat to a gentle simmer. Stir frequently and cook for an additional 15-20 minutes, or until the tapioca pearls become translucent.
- Beat the Eggs: While the tapioca pearls cook, whisk together the eggs and the remaining ¾ cup of sugar in a medium-sized bowl.
- Temper the Eggs: Slowly add about ⅓ cup of the hot tapioca mixture to the egg mixture, whisking constantly to temper the eggs. Gradually add half of the hot mixture to the eggs, continuing to stir.
- Combine the Mixtures: Pour the egg mixture back into the saucepan with the remaining tapioca. Stir continuously while cooking for another 3-5 minutes, or until the pudding thickens slightly. Remember, it will continue to thicken as it cools.
- Add Vanilla and Chill: Remove from heat and stir in the vanilla extract. Divide the pudding into serving dishes and allow it to cool before refrigerating. Serve chilled.
