For the Yellow Rice:

  • 1 1/2 cups long-grain rice
  • 2 1/2 cups chicken broth
  • 1/2 teaspoon turmeric or a pinch of saffron threads
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

For the Steak Bites:

  • 1 lb (450g) sirloin steak, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • Salt, to taste

For the Shrimp:

  • 1 lb (450g) large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • Salt, to taste

For the Vegetables:

  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Garnish:

  • Chopped chives or green onions

Preparation Steps:

1. Yellow Rice Preparation:

Heat olive oil in a medium saucepan over medium heat. Add the finely chopped onion and minced garlic, sautéing until they are softened and aromatic.

Stir in the rice, ensuring each grain is coated in the oil. Pour in the chicken broth, followed by turmeric or saffron, salt, and pepper. Bring to a boil.

Lower the heat to a simmer, cover, and cook for 18-20 minutes until the rice is fully cooked and the broth is absorbed. Fluff with a fork and set aside.

2. Cooking the Steak Bites:

Heat olive oil in a large skillet over medium-high heat. Season the steak bites with paprika, black pepper, and salt.

Add minced garlic to the skillet, cooking briefly for about 30 seconds before adding the seasoned steak bites.

Sear the steak for 2-3 minutes on each side, adjusting based on your preferred doneness. Once cooked, set aside.

3. Cooking the Shrimp:

Using the same skillet, add more olive oil if necessary. Season the shrimp with paprika, garlic powder, black pepper, and salt.

Cook the shrimp for 2-3 minutes on each side until they turn pink and are fully opaque. Remove from the skillet and set aside.

4. Sautéing the Vegetables:

In a separate skillet, heat olive oil over medium heat. Add the sliced red and green bell peppers, sautéing for 4-5 minutes until they are tender yet still retain a slight crunch. Season with salt and pepper to taste.

5. Assembling the Dish:

Serve by placing a generous portion of yellow rice on each plate. Top the rice with steak bites, shrimp, and the sautéed bell peppers.

Garnish with freshly chopped chives or green onions for a vibrant finish.
