Spanakopita Recipe

Ingredients:

  • 1 egg
  • 125 ml (Ā½ cup) milk
  • 125 ml (Ā½ cup) vegetable oil
  • 2 tablespoons water
  • 1 teaspoon salt
  • Cooked spinach, drained
  • Feta cheese
  • Salt and pepper to taste
  • 3 sheets of filo dough
  • Poppy seeds
  • 1 egg yolk

Instructions:

  1. Prepare the mixture: In a mixing bowl, combine the egg, milk, vegetable oil, water, and salt. Whisk together until well blended.
  2. Assemble the filo layers: Lay out one sheet of filo dough on a flat surface. Lightly brush with the prepared mixture, ensuring it covers the entire sheet. Repeat the process with the remaining two sheets, layering them on top of each other.
  3. Add the filling: In a separate bowl, mix the cooked spinach and crumbled feta cheese. Season with salt and pepper to taste. Spread this mixture evenly over the layered filo dough.
  4. Roll and cut: Carefully roll the filo dough from one end to the other, forming a long strip. Using a sharp knife, cut the roll into triangular pieces.
  5. Prepare for baking: Place the triangles on a baking sheet lined with parchment paper. Brush each triangle with the egg yolk and sprinkle with poppy seeds.
  6. Bake: Preheat the oven to 180Ā°C (356Ā°F) and bake for 15 minutes, or until the triangles are golden brown and crispy.
