Marinated Tomatoes and Cucumbers in Olive Oil

Ingredients:

  • 2 large cucumbers, thinly sliced
  • 1 large red onion, thinly sliced
  • 3 large tomatoes, sliced or cut into wedges
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar or red wine vinegar
  • 2 teaspoons sugar (optional, for a touch of sweetness)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder (optional)
  • Fresh parsley or basil for garnish (optional)

Instructions:

1. Prepare the Vegetables:

Thinly slice the cucumbers and onions. Slice or cut the tomatoes into wedges.

2. Make the Marinade:

In a small bowl, whisk together the olive oil, vinegar, sugar (if using), salt, pepper, dried oregano, dried basil, and garlic powder (optional).

3. Combine and Marinate:

In a large mixing bowl, add the cucumbers, tomatoes, and onions. Pour the marinade over the vegetables, tossing them gently to ensure even coating.

4. Refrigerate:

Cover the bowl and refrigerate for at least an hour to allow the flavors to develop. For the best taste, let it marinate for several hours or overnight.

5. Serve and Garnish:

Before serving, give the salad a gentle toss. Garnish with fresh parsley or basil if desired.
