Ingredients:
- 2 egg yolks
- 1 tablespoon milk
- 1/2 teaspoon vanilla essence
- 1/2 teaspoon baking powder
- 1/2 cup cake flour
- 3 egg whites
- 1/4 teaspoon cream of tartar
- 2 tablespoons granulated sugar
- Vegetable oil
Instructions:
1. Prepare the Egg Yolk Mixture
In a bowl, whisk together the egg yolks, milk, and vanilla essence until the mixture becomes slightly thick. Sift in the baking powder and cake flour, then whisk until the ingredients are well incorporated. Set aside.
2. Whip the Egg Whites
In a separate bowl, add the cream of tartar to the egg whites. Whisk until the mixture becomes frothy and light. Gradually add the sugar while continuing to whisk, and keep whipping until stiff peaks form.
3. Combine the Mixtures
Gently fold a portion of the whipped egg whites into the egg yolk mixture. Once combined, gradually add the rest of the egg whites. Mix carefully to avoid deflating the batter. Transfer the batter to a piping bag.
4. Cook the Pancakes
Preheat a non-stick pan on low heat for 2 to 3 minutes and lightly grease it with vegetable oil. Pipe three portions of the batter onto the pan, each about 3 inches tall and 3 inches wide. Cover the pan and cook for 6 to 7 minutes. Afterward, check the bottoms of the pancakes; if theyāre golden brown, gently flip them over. Cover again and cook for another 4 to 5 minutes until the other side is also golden brown.
5. Serve
Remove the pancakes from the pan and place them on a serving plate.
