Baked Cottage Cheese Eggs
Ingredients:
- 6 large eggs
- 450 grams (about 2 cups) cottage cheese
- 100 grams (1 cup) sharp cheddar cheese, grated
- 1/4 cup (25 grams) Parmesan cheese, grated
- 1/4 cup (30 grams) all-purpose flour
- 2 tablespoons (30 milliliters) melted butter
- 1 teaspoon (5 milliliters) baking powder
- 1/2 teaspoon (2.5 milliliters) salt
- 1/4 cup (25 grams) chopped green onions
- Fresh parsley, chopped (for garnish)
- Red pepper flakes (optional, for garnish)
Instructions:
- Preheat the Oven: Preheat your oven to 350Ā°F (175Ā°C). Lightly grease a 9×9-inch baking dish.
- Prepare the Mixture: In a large bowl, whisk the eggs until well combined. Mix in the cottage cheese, cheddar, Parmesan, flour, melted butter, baking powder, and salt until smooth.
- Add Green Onions: Fold in the chopped green onions.
- Bake: Pour the mixture into the prepared baking dish. Bake in the preheated oven for 35 to 40 minutes, or until the center is set and the top is golden brown.
- Garnish and Serve: Allow the dish to cool slightly before slicing. Garnish with chopped fresh parsley and, if desired, a sprinkle of red pepper flakes.
