Slow Potato Broccoli Cheddar Soup
Ingredients:
- 1 onion, finely chopped
- 1 carrot, finely chopped
- 1 handful of celery, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon butter
- 2.5 cups chicken broth
- 2 tablespoons flour
- 1 cup milk
- 2 potatoes, diced into small cubes
- 4 cups broccoli florets, chopped into small pieces
- 1 cup grated cheddar cheese
- 1 tablespoon grated Parmesan cheese
Preparation:
- Prepare the Vegetables: Begin by finely chopping the onion, carrot, celery, and garlic in a food processor.
- SautƩ the Vegetables: In a large saucepan, melt the butter over medium heat. Add the chopped vegetables and sautƩ for about 5 minutes, stirring occasionally.
- Thicken the Soup Base: Sprinkle in the flour along with a pinch of salt and pepper. Stir until the flour is well incorporated. Gradually add the chicken broth, followed by the milk and diced potatoes. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
- Add Broccoli and Cheese: Stir in the chopped broccoli and Parmesan cheese. Allow the soup to simmer for an additional 5 minutes. Then, add the grated cheddar cheese and stir until fully melted and combined.
- Blend for Creaminess: Carefully remove 2 cups of the soup and blend until smooth. Return the blended soup to the pot and stir to combine, creating a creamy texture.
