Summer Salad Recipe
Ingredients:
- 4 thinly sliced cucumbers
- 1 large red onion, sliced
- 1 large green bell pepper, sliced
- 1 tablespoon salt
- 2 cups white vinegar
- 1 Ā½ cups sugar
- 1 teaspoon celery flakes
- 1 teaspoon red pepper flakes
Instructions:
- In a large bowl, combine the cucumbers, onions, peppers, and salt. Set the mixture aside.
- In a pot, bring the vinegar, sugar, celery flakes, and red pepper flakes to a boil. Once boiling, remove from heat and add two handfuls of ice, stirring until the ice melts.
- Transfer the prepared vegetables into large, wide-mouth canning jars (two quarts or one half-gallon jar). Pour the vinegar mixture over the vegetables, ensuring they are fully submerged.
- Seal the jars and store them in the refrigerator. The salad can be enjoyed for up to two months.
Yield:
2 quarts.
