Tomato Pie is a classic Southern dish in the United States

Introduction

Do you have a plethora of tomatoes in your garden? Here is a GREAT way to use them. This is my recipe for FABULOUS Tomato Pies. I only make them when I can get local, homegrown tomatoes. If you have any questions – please ask. I make about 50 of these each week during the summer and I’ve done it for 5 summers – THAT’S A LOTTA TOMATO PIES. I’ve encountered every possible problem – so feel free to ask questions.

Ingredients

  • 5-6 medium HOMEGROWN Tomatoes (hot house tomatoes just don’t do it!)
  • 1 DEEP DISH Pie Crust
  • 1 Cup Mozzarella
  • 1 Cup Sharp Cheddar
  • 1 Cup Mayonnaise
  • 1/3 Cup Parmesan
  • 1/2 Tsp Garlic Powder
  • Salt and Pepper to taste
  • Fresh Basil (chiffonade cut)
  • Sliced Green Onion
  • Bacon (optional – but really good!)
  • Smoked Paprika (optional – for garnish)

Instructions

  1. Thick slice tomatoes (1/4”) and place them between paper towels to absorb some of the liquid. DO NOT refrigerate your tomatoes, it robs the flavor!
  2. Preheat oven to 350°F (175°C).
  3. Pre-bake the pie crust: perforate it with a fork and bake for 12–13 minutes.
  4. Mix together the topping ingredients: mozzarella, cheddar, mayo, parmesan, and garlic powder until well blended.
  5. Assemble the pie: Place a layer of tomatoes on the bottom of the crust. Sprinkle with salt, pepper, basil, green onions, and bacon (if using).
  6. Add a second layer of tomatoes. Season again.
  7. Spread cheese mixture over the top and press it down gently.
  8. Sprinkle smoked paprika on top for color and flavor.
  9. Bake for about 30 minutes until golden brown and bubbling.
